Assam, Darjeeling and Ceylon: the combination of black teas from these growing regions - refined with a touch of bergamot oil - is one of the most popular: Earl Grey. Malty Assam and noble Darjeeling - both come from India. One comes from large, fertile, humid and hot tea gardens near the Brahmaputra River. The second from higher gardens on the southern slopes of the Himalayas, where it is mountainous, cool and foggy. The British got them a taste for it in the 19th century when they built large tea plantations so that they were no longer so dependent on China.
