These delicious coffee muffins are quick to make and offer a delicious coffee aroma. Perfect for breakfast, coffee breaks or as a sweet snack in between meals!

Zutaten (für 12 Muffins)

250 g flour
150 g sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch of salt
2 eggs (room temperature)
120 ml Espresso Fortissimo from My Coffee Cup
100 ml milk
100 g butter (melted)
1 teaspoon vanilla extract
100 g chocolate chips (optional)
For the topping (optional)
50 g powdered sugar
2 tbsp Espresso Fortissimo or Ristretto Italiano from My Coffee Cup
Chopped nuts or chocolate sprinkles for sprinkling

ZUBEREITUNG

Backofen vorheizen

Preheat the oven to 180 °C (top/bottom heat) or 160 °C (fan oven). Prepare a muffin tray with paper cases or lightly grease the cases.

Trockene Zutaten vermengen

In a large bowl, mix flour, sugar, baking powder, baking soda and salt well.

Mix wet ingredients

In a second bowl, mix together the eggs, cooled coffee, milk, melted butter and vanilla extract until smooth.

Teig zubereiten

Add the wet ingredients to the dry ingredients and mix everything carefully but thoroughly. Do not mix for too long so that the muffins remain fluffy. Finally, fold in the chocolate chips, if desired.

Fill the dough into the molds

Divide the batter evenly into the muffin tins, filling them about 2/3 full.

Bake

Die Muffins im vorgeheizten Ofen ca. 18-20 Minuten backen, bis sie goldbraun sind und bei der Stäbchenprobe kein Teig mehr kleben bleibt.

Prepare topping (optional):

Den Puderzucker mit dem heißen Kaffee zu einer glatten Glasur verrühren. Die abgekühlten Muffins damit beträufeln und nach Belieben mit gehackten Nüssen oder Schokostreuseln dekorieren.

Die Muffins vollständig abkühlen lassen und dann genießen!
