- Soak the dates in hot water for at least 30 minutes.
- Then mix flour, cocoa and salt in a bowl.
- Now drain the dates and add them to the dry mixture with the wet ingredients (espresso and vanilla extract). Blend these in a food processor or high-powered blender to form a dough. (Optionally, chop the dates with a knife and knead with remaining ingredients to form a homogeneous dough).
- Chop the walnuts a little smaller and knead them into the dough with your hands.
- Roll the dough into small balls of equal size and then roll in the coconut flakes.
- Place the balls on a flat plate and refrigerate for about 30 minutes.
