1. Soak the dates in hot water for at least 30 minutes.
  2. Then mix flour, cocoa and salt in a bowl.
  3. Now drain the dates and add them to the dry mixture with the wet ingredients (espresso and vanilla extract). Blend these in a food processor or high-powered blender to form a dough. (Optionally, chop the dates with a knife and knead with remaining ingredients to form a homogeneous dough).
  4. Chop the walnuts a little smaller and knead them into the dough with your hands.
  5. Roll the dough into small balls of equal size and then roll in the coconut flakes.
  6. Place the balls on a flat plate and refrigerate for about 30 minutes.
